From May 17 to 18, 2017, Bor S. Luh Food Safety Research Center conducted a two-day specific training about restaurant food safety audit at Zhuanshan Restaurant Huajiang Road Shop and Longchang Road Shop, for 24 employees from ele.me. Furthermore, the Board member of the center, guest professor of Shanghai Jiao Tong University, Dr. Huang Yaowen was invited to be the chief trainer.

Based on the operational characteristics of ele.me and the potential risk, Professor Huang customized a set of courses for the learners, including staff’s ability in on-the-spot audit, food safety operation of restaurant employees, code of conduct of distribution personnel and etc. Professor Huang took checklists of on-the-spot inspection of restaurant used by US FDA and Shanghai FDA for reference, let the learners simulate and reproduce the whole process of restaurant audit and operation on the spot through on-site operation, explanation and demonstration of every link in the kitchen and pointed out the deviations and the correction, which added up to a direct-viewing, vivid and profound learning experience for the learners. After the training, the learners all gave feedback that the training was very practical, which solved tough problems at work, and provided a roadmap for future work.

In recent years, Ele.me representative of online catering platforms in China has enjoyed rapid development. Meanwhile, it is also troubled by the issues on the audit and management of franchised merchants. In particular, it was exposed by media last year that food safety problems existed in some franchised merchants of ele.me, which aroused consumers’ concern and exerted serious impact on the industry development. As a third-party platform, Ele.me has responsibility and obligation to solve food safety problems of franchised merchants. In view of this, our center signed cooperative agreement with ele.me, so that we can provide technical support for Ele.me in several aspects including food safety training, food inspection, and scientific research service, technically remove potential food safety hazards, establish relevant standards about food safety, and promote sound industry development accordingly.
