Jianhua Zhang

 

Jianhua Zhang, PhD, Associate Professor. Born in May 1968, Dr. Zhang obtained his Ph. D. in Food Science in June 2003 at China Agricultural University. He was offered a position of lecturer in 2003 and Associate professor in 2006 in Food Science at Shanghai Jiao Tong University. From February 2009 to August 2009, he worked as a visiting scholar in Food Science at UC Davis.


His research interests are Food Safety, Food Microbiology and Healthy Foods. He investigates the components from different resources, which have antimicrobial activities or some healthy functions.


He improves the flavor of natto, a soybean fermented healthy food by gene modification. He has published over 20 papers, and taken part in compiling 2 books.
