Yan Wu, PhD, Assistant Professor. She obtained MSc in Food Science in April, 2003 at Jiangnan University and Ph. D. in Food Science in June, 2007 at Jiangnan University. She is now working at Department of Food Science and Engineering, School of Agriculture and Biology, Shanghai Jiao Tong University.
Her research interests are Food Processing and Natural Functional Factors in Food. She conducts basic and applied research in separation, purification, structure and activity of polysaccharide from nature plants, and analyzes the relation between the bioactivity and structure of polysaccharides.
She has published more than 10 papers in recent years in international and national journals and applied 2 patents. At the same time, several projects she is carrying out stately, municipally and industrially are under way.
